Goldenberries Gluten Free Muffins

Ingrédients

  • 3⁄4 cups of brown rice flours
  • 3⁄4 cup of almond flour
  • 1 1⁄2 teaspoons of gluten free baking powder
  • 3⁄4 cup of sugar
  • 1 tsp of ground cinnamon
  • 1⁄2 tsp of ground ginger
  • 1⁄4 tsp of ground nutmeg
  • 1⁄2 cup of vegetable oil
  • 1⁄2 cup of greek yoghurt
  • 2 eggs lightly beaten
  • 1⁄2 cup of mashed banana
  • 1 cup of goldenberries cut in half
  • 1⁄4 cup of pistachios
  • 2 tbsps of chia seeds

Instructions

Preheat oven to 180°C ( 350°F).

Place the flour, ground almonds, baking powder, sugar and spices in a large bowl and mix to combine. Add the vegetable oil, yoghurt, beaten eggs and mashed banana and using a butter knife mix until just combined. Gently fold through the goldenberries and the pistachios.
