
Goldenberries Gluten Free Muffins

Ingrédients
- 3⁄4 cups of brown rice flours
- 3⁄4 cup of almond flour
- 1 1⁄2 teaspoons of gluten free baking powder
- 3⁄4 cup of sugar
- 1 tsp of ground cinnamon
- 1⁄2 tsp of ground ginger
- 1⁄4 tsp of ground nutmeg
- 1⁄2 cup of vegetable oil
- 1⁄2 cup of greek yoghurt
- 2 eggs lightly beaten
- 1⁄2 cup of mashed banana
- 1 cup of goldenberries cut in half
- 1⁄4 cup of pistachios
- 2 tbsps of chia seeds
Instructions
Preheat oven to 180°C ( 350°F).
Place the flour, ground almonds, baking powder, sugar and spices in a large bowl and mix to combine. Add the vegetable oil, yoghurt, beaten eggs and mashed banana and using a butter knife mix until just combined. Gently fold through the goldenberries and the pistachios.
