Grilled salmon with fresh, fruity gremolata

Serves 6


  • 125 gr of goldenberries
  • 1 orange
  • 125 gr of pomegranate seeds
  • 1 cup of Italian parsley
  • 6 salmon filets
  • Olive oil
  • Salt and pepper


First make the remolata by preparing your food processor with blades.

Squeezes out half of your orange in the food processor and scoop out the remaining flesh of the orange. Add 10 golden berries in the food processor and roughly ground them. Place the mixture in a bowl

Cut the remaining goldenberries into small pieces, peel the remaining half of the orange and cut into small pieces. Add the cut-up fruit and pomegranate seeds to the bowl with orange and goldenberry juice.

Finally chop the parsley and add.

Rub the salmon with olive oil and season with salt and pepper. Preheat a grill pan over medium heat. Grill your salmon for 5 minutes on each side.

Serve the salmon with your fresh gremolata. Enjoy!
