- 1 packet of kale leaves trimmed
- Extra virgen olive oil
- Half a lemon
- Sea salt
- 1 cup of goldenberries cut in half
- 1⁄2 cup of blue cheese broken into chunks
- 1⁄2 cup of walnuts
Place the kale in a large bowl and add a good splash of olive oil , a squeeze of lemon juice and a sprinkling of sea salt.
Lightly massage the kale for 30 seconds until it softens.
Add the goldenberries, blue cheese and walnuts and toss to combine.
Divide between 4 plates and serve.
